A little crock of melted Chihuahua cheese (yes, Chihuahua cheese is a real thing—it’s a premiere brand of that gooey, melty white cheese that often has me housing an entire basket of chips at Mexican restaurants), flavorful house-made chorizo (not too spicy, just tasty!), and fire-roasted poblano peppers is served piping hot, gooey and melty. The tub of goodness comes accompanied by warm tortillas, but make sure you also have plenty of chips, because this muy deliciosa combination is just as satisfying when enjoyed from a crunchy corn-based dipping vehicle. You can also get it vegetarian without the chorizo. Try it ASAP. Thank me later.
